UPSIDE-DOWN PEAR CAKE
MAKES 16 SERVINGS


INGREDIENTS

1 package yellow cake mix
3/4 cup brown sugar
2 cans (15 ounces each) Bartlett pear slices, drained, with juice reserved
1 cup cranberries
1/2 cup chopped pecans

METHOD

Grease a 13 x 9-inch cake pan. Prepare cake, following package directions, but substituting equal parts reserved pear juice for water. Sprinkle bottom of cake pan with brown sugar. Arrange pear slices evenly on brown sugar in pan. Top with cranberries and pecans. Pour batter evenly over pears in pan, being careful not to disturb the layered fruit. Bake according to package directions.
