STORMY
DAY BREAKFAST BREAD PUDDING
MAKES 6 SERVINGS
INGREDIENTS
2 cups low-fat milk
2 eggs
1/3 cup packed brown sugar
3/4 teaspoon vanilla extract
1/4 teaspoon salt
4 cups dry bread cubes
1 can (15 ounces) Bartlett pears halves or slices, drained, chopped
1/8 teaspoon ground cinnamon
1 cup low-fat granola
METHOD
In large bowl, combine milk, eggs, brown sugar, vanilla and salt; add
bread cubes. Pour mixture into lightly greased 8 x 8-inch pan. Arrange
pears over bread; sprinkle with cinnamon, top with granola. Bake at 350°F
50 to 60 minutes or until knife inserted near center comes out clean.
Let sit for five minutes. Serve warm.
