PEAR BUTTERMILK SODA BREAD
MAKES 1 LOAF, 8 SERVINGS


INGREDIENTS

2 cups all-purpose flour
1 cup whole wheat flour
1/4 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
1/4 cup butter or margarine, cut into pieces
1 can (15 ounces) Bartlett pear halves or slices, drained, chopped
1/2 cup golden raisins
3/4 cup buttermilk

METHOD

In large bowl, combine flours, sugar, baking soda and salt; mix well. Using 2 knives or pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in pears and raisins. Add buttermilk, mixing until just combined. Turn dough onto floured surface. With floured hands, knead 10 times. (Dough will be moist.) Form into ball; place on lightly greased baking sheet. With sharp knife, cut a deep "X" into top of load. Bake at 350°F for 45 to 50 minutes or until browned. Cool on wire rack.
