PEAR
PECAN PIE
MAKES 8 SERVINGS
INGREDIENTS
2 cans (15 ounces each) Bartlett pears sliced and drained
1/2 cup granulated sugar
1/4 cup all-purpose flour
1/2 teaspoon ground ginger
1/2 teaspoon lemon peel, freshly grated
1 (9-inch) Pie shell, unbaked
TOPPING:
1/2 cup
brown sugar, packed
1/3 cup all-purpose flour
1/4 cup butter or margarine, melted
1 cup pecans, chopped
As needed pecan halves
As needed vanilla ice cream (optional)
METHOD
In small
bowl, combine topping ingredients; mix well. Set aside. In large bowl, combine
pears, sugar, flour, ginger and lemon peel; mix well. Arrange pear mixture
in pie shell; sprinkle evenly with topping. Bake at 425°F for 30 minutes
or until crust is browned. Cool on wire rack. Garnish pie with pecan halves
and serve with vanilla ice cream, if desired.
