PEAR UP CARROT
SALAD
MAKES 4 SERVINGS
INGREDIENTS
1
cup coarsely shredded carrot
1/4 cup finely chopped celery
2 tablespoons finely chopped onion
1 tablespoon chopped parsley
1/4 teaspoon salt
2 tablespoons reduced-fat honey mustard salad dressing
1 can (15 ounces) Bartlett pear halves, drained
METHOD
In bowl
combine carrot, celery, onion, parsley and salt. Mix well. Stir in salad
dressing. Mound 3 to 4 tablespoons mixture on each pear half. Serve on
lettuce leaf, if desired.
