PEAR GINGERBREAD
MAKES 12 SERVINGS


INGREDIENTS

2 tablespoons butter or margarine
1/4 cup (2-1/2 ounces) sugar
1/2 cup molasses
2-1/2 cups all-purpose baking mix
1 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/2 cup hot water
1 egg, beaten
1 can (15 ounces) Bartlett pears, drained
Whipped cream or whipped topping, for garnish

METHOD

Using electric mixer, beat butter and sugar until crumbly. Beat in molasses; reserve. In small bowl, mix dry ingredients. Beat dry ingredients alternately with hot water into butter mixture; beat in egg. Pour into lightly greased 8 x 8-inch baking pan. Scatter diced pears over top of batter; lightly press into batter. Bake at 350°F for about 40 to 45 minutes or until toothpick in the center comes out clean; cool on wire rack.

Optional: serve each portion with a dollop of whipped cream or whipped topping.
