PACIFIC ISLAND PEAR-COCONUT
BARS
MAKES 24 BARS
INGREDIENTS
COOKIE
BASE:
2 cups
flour
3/4 cup butter
3/4 cup brown sugar
TOPPING:
2
eggs
1-1/2 cups brown sugar
1/4 cup flour
1 teaspoon vanilla
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup flaked coconut
1 can (15 ounces) Bartlett pears, drained and diced
1/2 cup flaked coconut (optional)
METHOD
For cookie base, in bowl combine flour, butter and brown sugar. Cut butter
into dry ingredients until small crumbs form. Press into bottom of lightly
greased 13 x 9 x 2-inch baking pan. Bake in 350°F oven for 15 minutes.
Meanwhile
for topping, combine eggs, brown sugar, flour, baking powder, vanilla
and salt. Beat until well blended. Stir in 1 cup coconut. Spread topping
evenly over baked crust. Sprinkle diced pears evenly over topping; lightly
press pears into topping. If desired, sprinkle with additional coconut.
Bake in 350°F oven for about 20 minutes or until topping is puffed
up around pear pieces and top is lightly brown. Cool on rack. Cut into
24 bars.
