PEAR CHOCOLATE
SILK PIE
MAKES 10 SERVINGS
INGREDIENTS
1-1/4 cup butter, melted
1 cup chocolate wafer cookie crumbs
1/4 cup granulated sugar
1/3 cup butter, melted
1 can (15 ounces) Bartlett pear halves
1 package (12 ounces) semi-sweet chocolate chips
2 tablespoons strongly brewed coffee
1 teaspoon orange extract
1 cup heavy cream
METHOD
Prepare crust in small bowl, combine wafer crumbs, sugar and butter;
mix well. Press crumb mixture evenly on to bottom and sides of 8 x 9 pie
plate. Bake at 375°F for 6 to 8 minutes; cool on wire rack.
Drain pears, reserving 6 tablespoons liquid. Slice 1 pear half; reserve
for garnish. Dice remaining pear halves, set aside. In the top of a double-boiler,
combine chocolate chips with reserved pear liquid, coffee and orange extract.
Stir over medium heat until chocolate chips are melted and mixture is
smooth. Remove from heat; cool to room temperature. In separate bowl,
whip cream to soft peaks. Gently fold whipped cream into choclate mixture.
Fold in diced pears. Spoon mixture into pie crust. Garnish with reserved
pear, refrigerate until set, approximately 4 hours.
Tip: For crust, ready-made chocolate wafer or graham cracker
crust may be substituted.
