PEAR
CHERRY COMPOTE
MAKES 6 SERVINGS
INGREDIENTS
1
can (15 ounces) Bartlett pear halves, in syrup
1/2 cup dried
cherries
1 vanilla
bean, split in half lengthwise
1 strip of
lemon peel
METHOD
Drain pears, reserving
liquid. In small saucepan, bring syrup, cherries, vanilla bean and lemon
peel to a boil. Reduce heat and simmer gently for 5 minutes. Meanwhile,
cut pears into small pieces. Remove compote from heat; discard vanilla
bean and lemon peel and stir in pears. Serve warm or at room temperature
over waffles or pound cake.
