NO-BAKE
PEAR GINGER PIE
MAKES 10 SERVINGS
INGREDIENTS
1-1/2 cups
sugar
1 cup golden
raisins
1/2 cup lemon
juice
1/2 cup butter,
cut into pieces
6 tablespoons
cornstarch
1/4 cup crystallized
ginger, finely chopped
2 cans (15 ounces each)
Bartlett pear slices, drained
1 (9-inch)
prepared graham cracker crust
METHOD
In medium saucepan, combine all ingredients except pears and crust. Bring
mixture to a boil over medium heat, stirring constantly. Boil 2 minutes,
until mixture is no longer cloudy. Remove from heat and stir in pears. Pour
filling into pie crust. Refrigerate until chilled and filling is set.
