MT. HOOD PITA POCKETS
MAKES 4 SERVINGS


INGREDIENTS

1 can (15 ounces) Bartlett pear halves, drained and chopped
1/2 cup shredded low-fat mozzarella cheese
2 tablespoons chopped toasted nuts
1/4 cup diced celery
1 teaspoon chopped parsley
1/2 cup low-fat ricotta cheese
1 tablespoons low-fat mayonnaise
2 teaspoons finely chopped red onion
1 teaspoon ground cumin
2 large pita bread rounds, halved
Spinach leaves as desired

METHOD

In medium bowl, combine pears, mozzarella, nuts, celery and parsley; mix gently. In separate bowl, combine ricotta cheese, mayonnaise, onion and cumin; mix well. Gently toss fruit mixture with ricotta mixture. Spoon into pita halves; add 1 or 2 spinach leaves to each sandwich.
