PEANUT BUTTER AND PEAR FRENCH
TOAST
MAKES 4 SERVINGS
INGREDIENTS
1 can (15 ounces)
Bartlett pear halves sliced, drained
1/3 cup peanut
butter
8 slices firm,
white bread
2 large eggs
1/4 cup milk
1 tablespoon
honey
1/8 teaspoon
ground cinnamon
1 to 2 tablespoons
butter
(optional) honey or maple syrup
METHOD
Cut pears into 1/4-inch
thick slices; set aside. Spread 1 teaspoon peanut butter on each slice
of bread, one side only. Place pears on peanut butter side of 4 slices.
Put 2 slices of bread together to make a sandwich with peanut butter and
pears for the filling; repeat with remaining slices. In medium shallow
bowl, combine eggs, milk, honey and cinnamon; whisk or stir with fork
until blended. Dip sandwiches into egg mixture, evenly coating both sides.
In large skillet, melt butter over medium heat. Cook sandwiches 1 to 2
minutes on each side until golden brown. Serve hot with honey or syrup.
