Pear & Banana Oatmeal Cereal Bars

Yield: 21 bars (1 half-sheet pan)


  • 3-1/2 cups Quick cooking oats
  • 1-1/4 cup Skim milk
  • 2/3 cup Brown sugar
  • 1 cup Pacific Northwest Canned Pears, diced
  • 2 medium Bananas, peeled
  • 2 Eggs
  • 2 tablespoons Ground cinnamon
  • 2 teaspoons Vanilla extract

    Preheat the oven to 350°F. Line a half sheet pan with parchment paper or a silpat mat. Place bananas, pears, brown sugar, eggs, cinnamon, and vanilla in a large bowl. Mash ingredients together. Add the oats and milk, and mix to combine. Spread the mixture on the prepared sheet pan, smoothing the surface. Bake for about 20 minutes, until lightly browned and firm to the touch. Let cool completely. Cut into bars 3" x 7".
