Caramelized Pear Yogurt Mousse

Makes 12 1/2-cup Servings


  • 4 cups prepared vanilla pudding, fat-free
  • 2 cups greek-style vanilla non-fat yogurt
  • 28 Caramelized Pear Halves, diced
  • 12 Caramelized Pear Halves for garnish

    In a bowl combine pudding, yogurt, diced Caramelized Pear Halves and spices, mix well. Divide the mouse between 12 x 6-oz. dishes or cups. Cover and chill in refrigerator until firm and cold. Top each portion with a Caramelized Pear Half to serve.
    40 Pacific Northwest Canned Pear halves, in juice, drained
    2 Tbsp. vegetable oil
    2 Tbsp. granulated sugar
    1 tsp. ground cinnamon
    1 tsp. ground ginger
    Place pear halves cut-side-down on full-sized sheetpan and brush with oil. In a bowl, combine sugar and spices. Sprinkle the pear slices with sugar-spice mixture and bake in a convection oven at 375°F. for 35-40 minutes or until pears are caramelized, turning once during roasting period. Remove from heat and cool to room temperature. Hold.
