Pear Waldorf Salad

MAKES 6 TO 8 SERVINGS

INGREDIENTS

  • 3 tablespoons mayonnaise
  • 1/4 cup plain lowfat yogurt
  • 1 tablespoon chopped parsley or fresh mint
  • 1/8 teaspoon salt
  • dash nutmeg
  • dash white pepper
  • 1 cup finely chopped celery
  • 1/2 cup chopped toasted walnuts
  • 2 cans (15 ounces each) Bartlett pears drained and diced
  • METHOD

    In a bowl combine mayonnaise, yogurt, parsley, salt, nutmeg and pepper; mix well. Add celery, walnuts and pears. Toss to mix. Cover and chill at least 1 hour. Serve on lettuce leaf if desired.
