Pear Waldorf Salad
Makes 6 to 8 Servings
INGREDIENTS
3 tablespoons mayonnaise
1/4 cup plain lowfat yogurt
1 tablespoon chopped parsley or fresh mint
1/8 teaspoon salt
dash nutmeg
dash white pepper
1 cup finely chopped celery
1/2 cup chopped toasted walnuts
2 cans (15 ounces each) Bartlett pears drained and diced
METHOD
In a bowl combine mayonnaise, yogurt, parsley, salt, nutmeg and pepper; mix well. Add celery, walnuts and pears. Toss to mix. Cover and chill at least 1 hour. Serve on lettuce leaf if desired.
