Asian Pear Slaw
Yield: 6 x 1-cup servings
INGREDIENTS
1 x 12-oz.-package broccoli slaw mix (4 cups)
1 x 15-oz.-can Pacific Northwest Canned Lite Pear halves, drained, cut into 1-in. chunks, reserve juice
1 cup peeled, seeded and diced cucumber
1 cup shredded carrots
1 x 3-oz. package Ramen noodles, crushed
1/2 cup sliced scallions
1/2 cup cilantro leaves
3/4 cup Asian Pear Dressing*
2 Tbsp. toasted black sesame seeds
METHOD
1. In large bowl toss together broccoli slaw, pear chunks, cucumber dices, carrot shreds, Ramen noodles, scallion and cilantro; mix gently.
2. Stir in Asian Pear Dressing* and gently toss to mix. Cover. Refrigerate at least 4 hours, stirring occasionally before serving.
3. To Serve: Place 1 cup slaw mixture per serving in a bowl and sprinkle top with 1 tsp. sesame seeds.
* Asian Pear Dressing (3/4 cup)
Ingredients
3/4 cup reserved Pacific Northwest Lite Canned Pear juice
1/4 cup rice wine vinegar
1/4 cup tahini
2 Tbsp. pickled ginger, minced
2 Tbsp. dark sesame oil
1 Tbsp. soy sauce
1 Tbsp. pickled ginger juice
1 tsp. wasabi paste
1 tsp. Yazoo juice or lemon juice
Heat Pear juice in a small stainless pan and reduce syrup to 1/4 cup. Cool to room temperature.
In a stainless bowl, whisk together reduced Pear juice with all remaining ingredients until well blended. Cover. Refrigerate at least 2 hours before using as directed.
