Pear & Cherry Clafouti

Makes 9 Servings


  • 1/2 cup dried cherries
  • 1/2 can (approx. 8 ounces) Bartlett sliced pears, drained
  • 3 eggs
  • 1 cup milk
  • 1/3 cup sugar
  • 1/4 cup flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • powdered sugar (optional)
  • whipped cream (optional)

    Soak cherries is hot water for 10 minutes; drain. In greased 8 x 8 x 2-inch or 9 x 9 x 2-inch baking pan arrange cherries and pear slices evenly. In bowl, beat eggs until well blended. Beat in milk, sugar, flour, vanilla, nutmeg and salt until smooth and well mixed. Pour over fruit in pan. Bake in 375° F oven for 20 to 25 minutes or until set in center. Cool slightly. Cut into squares to serve. Serve warm sprinkled with powdered sugar and a dollop of whipped cream, if desired.
