PEAR ALMOND
COUSCOUS
MAKES 4 SERVINGS
INGREDIENTS
1 can (14-1/2 ounces) chicken broth
1/4 cup raisins
3/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon ground black pepper
1 can (15 ounces) Bartlett pears, drained, chopped
1 tablespoon lemon juice, fresh
1 cup couscous
1/3 cup almonds, sliced
2 tablespoons cilantro, fresh, chopped
1 tablespoon butter or margarine
METHOD
In medium saucepan, combine broth, raisins, salt, cumin and pepper;
bring to a boil. Remove from heat; stir in remaining ingredients. Cover;
let stand 10 minutes. Stir before serving.
