SMOKED TURKEY
CHOWDER
MAKES 6 SERVINGS
INGREDIENTS
2 tablespoons butter
1/2 cup chopped onion
2 tablespoons all-purpose flour
1 can (14-1/2 ounces) chicken broth
1 cup half and half (2% milk may be substituted)
1/2 pound cooked smoked turkey meat, cut into 1/2 inch pieces
1/2 can (15 ounces each) Bartlett pear halves or slices, in juice
1 can (8-3/4 ounces) whole kernel corn, drained
3/4 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme, crushed
1/4 teaspoon black pepper
METHOD
In large saucepan, melt butter over medium-high heat; add onion and
cook until tender, 4 to 6 minutes. Add flour; stir to coat onions. Add
chicken broth and half and half; add all remaining ingredients. Bring
mixture to a boil, stirring constantly; reduce heat and let simmer 5 minutes.
Serve hot.
