HARVEST CASSEROLE
MAKES 6 SERVINGS


INGREDIENTS

Pear harvest casserole
1 can (15 ounces) Bartlett pears slices, drained and diced
2 cans (16 ounces) new potatoes
1 can (12 ounces) nonfat evaporated milk
2 teaspoons cornstarch
1 can (8 ounces) peas
1 cup Monterey Jack cheese, shredded
1 small can (2.8 ounces) French fried onion rings

METHOD

Preheat oven to 350°F. Pour evaporated milk into a small bowl, mix in the cornstarch, set aside. In a larger bowl, mix together pears, potatoes and milk mixture until well coated. Pour into 2 quart casserole. Sprinkle with cheese and peas. Bake uncovered for 30 minutes until heated through. Sprinkle with onions and return to oven for 5 minutes until golden. Suggested serving alongside slices of lean cooked canned ham.
