PEAR AND CHERRY CLAFOUTI
Yield: 24 Servings

INGREDIENTS

7 oz. (1-1/2 cups) Dried cherries
1 lb. Pacific Northwest Canned Pear Slices, drained
9 Eggs
3-3/4 cups Milk
8 oz. (1 cup) Sugar
3 oz. (3/4 cup) Flour
2 Tbsp. Vanilla extract
1 tsp. Ground nutmeg
1 tsp. Salt
As needed Powdered sugar (optional)
As needed Whipped cream (optional)

METHOD
Soak cherries in hot water for 10 minutes; drain. Arrange cherries and pear in a single layer in a well-buttered 12" x 20" x 2" pan. Reserve. Beat eggs; beat in milk, sugar, flour, vanilla, nutmeg and salt. Pour mixture over fruit in reserved pan. Bake at 350†F until golden brown and a knife inserted in the center comes out clean. Cool until just warm; cut into 24 pieces, about 3" x 3". Keep warm in a counter pan or cool and reheat per order. Top each serving with powdered sugar and a dollop of whipped cream.
