FRAGRANT GLAZED PEARS
Yield: 24 Servings

INGREDIENTS

12 pounds Pacific Northwest Canned Pear Halves
12 Cinnamon sticks
1 Tbsp. Orange zest, grated
3/4 cup White raisins
3/4 cup Cognac or brandy
2 cups Honey

METHOD
Drain pears, reserving all liquid. Cover and refrigerate pears. Combine pear liquid with cinnamon sticks and orange zest in saucepan. Bring mixture to a boil. Simmer over medium heat until liquid is reduced to 3 cups. Stir in raisins and cognac; simmer for 1 more minute. Remove mixture from heat. Stir in honey. Allow mixture to cool. Remove cinnamon sticks and refrigerate until ready to serve. To serve place 2-3 pear halves in serving bowl. Drizzle with 3-4 tablespoons glaze.
